My New Lunch Salad

I really wasn't kidding about my new love for avocados. I have a new salad that has taken over the everyday turkey sandwich that I am very excited about.


I have been throwing chicken breasts into the crock pot at the beginning of the week. It has been the best time saver for meals! I can use it in anything, and it makes eating healthy so much easier.

While the bacon and goat cheese kind of knock out the healthiness on this one, it is an absolutely delicious salad that completely fills me up. I use equal amounts of lettuce and chicken.

Romaine- Cut Up Small
Handful of Shredded Chicken
5-6 Cherry Tomatoes- Cut Up
Half an Avocado- Cut Up
Little Sprinkling of Goat Cheese
Half a Piece of Bacon- Cut Up (Frida always gets the other half)

Vinaigrette (I mix all of this in a mason jar and shake it up. Keeps for a few days)
1/2 cup Olive Oil
3 Tbsp Balsamic Vinegar ( I used white. It was closer to me in the cabinet)
1 Tbsp Dijon Mustard (I used Spicy Brown. That's what I had)
1 Garlic Clove, minced
Salt and Pepper

I usually eat the other half of the avocado for desert. Because, come on, they don't really keep well. I can't let it go bad!

Ahhh, rainy mornings. Don't you want to just stay in bed? 
I fought it for a run today, but if this rain keeps up, I might just be sleeping in one day.

I've been working more on my guest bath. I have decided on a roller shade like this. Now, if I could just make a decision about the walls.....


I think I am utterly obsessed with avocados. I guess there are worse things, right? I have been finding myself running to the grocery store for the sole purpose of stocking up on these guys.

J.Crew Pink sequin pencil skirt. Perfect for a Christmasy time wedding. 


the Sombrero sheet set from Anthropologie. Not sure I would like those tassels in my face when I am trying to sleep, but I LOVE the look!

Book It!

Typing that title made me think of elementary school and personal pan pizzas from Pizza Hut.

A quick stop over at the Salvation Army during lunch turned up these two bookcases.



I have no desire or room for either, but both would look so great with a fresh coat of paint and maybe the doors removed. I'm loving the hardware on the bottom one.

Sausage Biscuit Saturdays

I love breakfast.
I love weekend guests.
But I don't want to wake up and stress about cooking breakfast for my weekend guests. I like weekend mornings to be easy- breezy. McD's Sausage Biscuit style, but a little fancier if there are special people staying in my home.

A few weekends ago, I did have special people staying over and wanted something
1. Impressive
2. Delicious &
3. Easy.
for breakfast. I found these on Greenville girl, Sarah Berry's food blog, Literally A Spoonful. I made them on Friday afternoon, and popped them in the oven and flipped on the coffee pot with one eye shut. And all served up with slices of cantaloupe.

It is the best breakfast ever for company.
Seriously.


Tina Treats
8 pack canned biscuits {large, homestyle is the kind I used}
1 tube Jimmy Dean breakfast sausage
1 can rotel
8 oz cream cheese
cheddar cheese

Brown sausage on stove, then drain. Next add can of rotel tomatoes {drained}, then cream cheese. Cut biscuit dough in half and place in a greased muffin tin. Then add several spoonfuls of the sausage mixture on top of the biscuits. Top with cheddar cheese.

Bake at 350 degrees for approximately 12 minutes.
 




Of course there are no "after" shots... we were too busy "visiting", but be assured, they popped out beautifully and were delicious! Doesn't this make you want to have spend the night company? Can I come spend the night?

This past month, I felt the need to buy myself a little treat. I had not bought or even borrowed any good design books in a while, and these two were at the top of my wish list.


I have big after work plans of curling up on the sofa with these two. Does anyone have these books? Has anyone gotten other design books lately I should check out?

Gallery Over-do

I love a gallery wall.
Who doesn't? I created my first one sometime around 2004 in the hallway of my teeny Midtown Memphis apartment because I had entirely too much framed art.. and then even had the one in Columbus published around 2008.


I've moved from a wall to a hall. This house was begging for it, and it is forever one of my favorite spots. I really think these walls can be a great way to show your creativeness while living around things you love.




I stick with the whole "white frame/ black mat" school of thought. I guess that's from my art student years, when everything had to have that "artsy" look. But it's a free- for-all on what is actually framed. 
I think one cohesive idea is very important.. whether all black and white photography,

though if you know what you're doing, a more bohemian look can most definitely work.


But I'm not just recapping my love. Why am I standing on my soapbox?
Over doing the gallery wall. Honestly, it cannot be done in every room in your house! Especially not in rooms near each other. Too many "littles" start to look junky and cluttered. And no one wants that, right? You need blank walls to let your eyes rest a little bit.
Start investing in larger pieces. Save money and buy things you love... real ones, not knock-offs (but that's a whole 'nother rant in itself).

Bacon Tomato Pie

Sometimes I wish I cooked. Then, I actually do it and have to clean up. That's not fun. I do really enjoy cooking though, especially for groups of people in party-form. I love a dip or appetizer. I made this Bacon Tomato Pie for our cookbook club last month then again for friends Monday night.
Pretty sure we will see it again. It is heavenly.


Bacon Tomato Pie
Adapted from Prime Meridian

6 Roma tomatoes, thinly sliced (I used Romas because they have fewer seeds)
1 9 inch pie crust, baked
2 tbsp finely chopped green onion
6-8 slices bacon, cooked crisp and crumbled
1 tsp sugar
6-8 leaves basil, chopped
1/8 tsp salt
1/8 tsp pepper
1/2 cup mayonnaise
2 cups shredded mozzarella

Preheat oven to 350. Layer tomatoes in pie crust. Sprinkle oinion and bacon over tomatoes. Mix sugar, basil, salt and pepper. Sprinkle over pie. Combine mayonnaise and cheese. Spread over top of pie. Bake 30 minutes.
*I turned the broiler on for a couple of minutes just to brown the top at the end. Keep an eye on the pie if you do this! Don't let it burn.

Top 5 Tuesday

Ahhhhh. The day after Labor Day. Is it fall yet? I am ready for sweater- weather, I know that. Not coats though. They can hold off for a while.
But even though I sweat through 93 degree weather today, there are 5 things that are making me smil.e

Essie's Chinchilly polish. I bought this during the summer since it worked with my grey J. Crew swimsuit but I am rocking it now preparing for cooler weather.

I laughed after I posted this picture last Thursday, since I didn't realize it was showing the wall paper I had just purchased the night before from Urban Outfitters! I know, I finally bit the bullet and picked a pattern. We'll just see where it is going. Guest bath? Butler's pantry? I'm accepting opinions at this time.

Calcutta Gold Marble. The combination of grey and gold is heavenly.

So glad I can mark that off the list.



Sometimes my phone likes to take pictures by itself. Or do screen captures when I'm trying to turn it off. Or not giving me the option of hanging up a phone call.
Uggg. It did take this picture on its own though, so it's forgiven for now.
We were fast like the wind.
 
I'm also half heartedly shopping for a crazy chandelier for my office. Something gold, glam and out of the 70's. Sounds fun, right?


It is very hard to get going this morning! I hope everyone had a great holiday weekend and has an even better week. I keep telling myself...It's only four days!
